We’re heading into a special weekend over here. My youngest turns another year older on March 8th, which also happens to be International Women’s Day.

I always love that little connection. So between birthday prep, regular life, and keeping everyone fed, this week’s meal plan is simple, reliable, and one less thing to think about.

Meal Tips

  • Teriyaki Chicken: If it’s possible to stir the crock pot teriyaki chicken while it’s cooking, do it. This ensures all the chicken breast pieces are coated. However, it’s not fully necessary.
  • Easy Chicken Bites: If you’re cooking in a cast-iron pan, you’ll need about 2 tbs of cooking oil. However, if cooking in a nonstick pan you’ll only need 1.
  • Teriyaki Meatballs: This recipe has not been made with gluten-free breadcrumbs, so I can't comment on the portion/a
  • One Pot Alfredo: Make sure to use coconut milk from a can and not a carton. Likewise, grab the “full fat” version and drain any excess water from the top.
  • Beef Barbacoa: This is optional, but searing the beef quickly before it goes in the slow cooker can make a big difference in flavor.

Recipe Customizations
Serve the beef barbacoa with warm corn or flour tortillas, Mexican rice, and black or pinto beans. For something lighter or low-carb, pile beef barbacoa onto cauliflower rice, in cauliflower tortillas, lettuce wraps, or over a fresh cabbage slaw. It’s also fantastic in burrito bowls!
