It’s February 27th, and I’m officially in “keep it moving” mode. Launching a new program (which actually is awesome) while managing regular mom life with a kid starting baseball this early has been… humbling 😂

So this week’s dinners are straightforward, filling, and low drama because I don’t need another complicated thing on my plate lol

Meal Tips

  • Chipotle Chicken: Scale back the amount of chipotle powder and adobo sauce you use if you don’t like a lot of heat.
  • Chimichurri Shrimp: For extra flavor, marinate the shrimp in the seasoning for 15-30 minutes before cooking.
  • Sausage Pasta: In place of Italian sausage, chicken sausage can be used. However, cooking times (and heat) may vary.
  • Dutch Oven Chicken: Put the water into the bottom of the Dutch oven and not over the chicken.
  • Slow Cooker Baby Back Ribs: For ultra-tender ribs, peel off the silverskin from the back of the ribs – this allows the seasoning and glaze to penetrate better. See Expert Tips above for instructions.

Recipe Customizations
For the steak pasta, if you double the crispy chicken, that works in place of the steak!
