March is officially in that “is it spring yet?” phase around here. Spoiler: it's not lol. We're rolling into March break here, so kiddos are off, and the chaos amps up.

Nothing fancy this week, frankly, I am semi-sick of all the meals lol, but these ones are solid and make evenings a little less chaotic.

Meal Tips

  • Sheet Pan Sausage: The “dressing’ doesn’t look like enough. However, when the sausages cook and release their juice it evens out
  • Slow Cooker Beef Fajitas: This beef fajita recipe was made in a 7 quart slow cooker. If you have a larger slow cooker you many not need to cook them as long. On the opposite side a smaller slow cooker you may need to cook them longer.
  • Lemon Noodle Bowl: The noodles cook extremely fast and tend to boil over. As soon as you add them to the pot, turn the pot to low-medium and keep an eye on it. They will only take about four minutes
  • Sweet Potato Shepherd's Pie: Only cook the ground beef most of the way through before you drain it. This way it’ll absorb more of the flavors you add to it and not dry out.
  • Herb Crusted Chicken: Serve with white or brown rice and roasted vegetables like broccoli, carrots, green beans, or asparagus. Mashed potatoes, crispy roast potatoes, or baked potatoes are also delicious.

Recipe Customizations
Use leftover beef from the fajitas to top your noodle bowl or grab a rotisserie chicken.
