The routines are back, the fridge somehow feels empty again, and suddenly everyone needs dinner every single night. The good news is these popsicles are now on repeat lol

Meal Tips

  • Slow Cooker Chicken Alfredo: When it’s time to put the noodles into the crock pot chicken alfredo, you should still have liquid left in the slow cooker. However, if it doesn’t look like enough, add in ¼c of water.
  • Tacos with Slow Cooker Ground Beef: Try to use thawed ground beef first as it’s easier to work with and there’s less chance of bacteria. If you use frozen ground beef or even if it's partially frozen, you’ll need to stir it more often to break it into chunks.
  • Spicy Chicken Bites: If you’re cooking in a cast-iron pan, you’ll need about 2 tbs of cooking oil. However, if cooking in a nonstick pan you’ll only need 1.
  • Sloppy Joe Sweet Potatoes: The dairy-free cheese and cashew sour cream are variable. Use what your diet allows, and your taste prefers.
  • Layered BLT Dip: Drain your tomatoes well once cut and pat your lettuce dry. Otherwise, your dip can become watery.

Recipe Customizations
I doubled the amount of slow cooker beef to make the Sloppy Joes faster to whip up. And for the chicken bites, I either serve them with rice and steamed veggies or mixed into noodles.

For the layered BLT dip I actually use a dairy-free yogurt or lactose-free sour cream in place of mayo. And dairy-free cheese for the kiddo and me and regular for hubby and other kids.
