There’s something about this week that always feels like a shift, Easter behind us, routines settling back in, and that hint of spring starting to show up.

Plus, my SMASH clients and I just wrapped up a 5-Day Smoothie Challenge, which was super fun and fresh-tasting.

So this week’s meal plan keeps things simple, fresh, and easy… just enough to get you back on track without making it a whole thing.

Meal Prep Tips

  • Slow cooker honey garlic chicken: The recipe results in a decent amount of sauce in the slow cooker. If you want a thicker sauce texture, whisk in 2 teaspoons of arrowroot powder to 3 tablespoons of sauce and pour it in about 30 minutes before you need it.
  • Egg roll in a bowl: Use a store-bought bag of coleslaw to save yourself from shredding the cabbage.
  • Crispy Thai Chicken: Try not to stir the chicken too much as cooks as you’ll tear off the breading. The chicken bites will continue to cook for a couple of minutes when you add the sauce.
  • Honey baked chicken: Though the recipe calls for you to marinate the chicken for at least thirty minutes (and it will taste better if you do!), I have been known to just shake the bag and start cooking. It blends the flavors well but it isn’t totally necessary.
  • Slow cooker fajitas: Most commonly, I use beef stir fry strips, but flank steak cut into strips works too.

Recipe Customizations
All of the recipes are already dairy and gluten-free (use gluten-free corn tortillas for the fajitas!). Of course, sprinkling some regular cheese on it if you tolerate it is always delicious.
