Hey Reader,

I don’t know about you, but long weekends usually mean I get a bit of a break from cooking, between family dinners and everything going on, I’m not exactly in the kitchen much 😅 (though I promised my MIL I'd make these gut-healthy deviled eggs!).

But by the time Monday rolls around, I’m so ready for real, feel-good meals again. So this week’s plan is all about getting back into it with simple, balanced dinners that don’t feel heavy but still hit the spot.

  • Slow Cooker BBQ Thigh: Because the chicken thighs release so much juice, the sauce isn’t sticky by the end of cooking. See the notes in the blog post for steps to take if you want stickier sauce.
  • Inside Out Egg Roll: I've been making double the sauce and then adding rice noodles into the pan with the extra sauce. Kinda pasta but just freakign yummy.
  • Pesto Pasta: To make this recipe a 15-minute meal, the chicken must be cooked ahead of time. Grilled chicken cut up, or roasted, shredded chicken both work for the recipe. Likewise, the flavored chicken will work as well as most flavors will pair nicely with pesto sauce.
  • Air fryer Steak bites:Though the flank steak will look cooked after seven minutes, keep it in the air fryer and cook for an additional three.
  • Honey Mustard Salmon: Overcooking the salmon can make it super firm, dry, and chalky. You’ll know that it’s ready when it flakes easily with a fork, but still moist.

Recipe Customizations
I've been serving the steak bites with my all-time fave root vegetable medley. The kids have rice and I just have a bowl mixed. The vegetables work as an Easter side dish too!
