So I’m rolling with that energy this week, keeping meals simple, doable, and just enough to feel on top of things again.

Meal Prep Tips

  • Slow cooker BBQ thighs: Because the chicken thighs release so much juice, the sauce isn’t sticky by the end of cooking. You can make it sticky with arrowroot though.
  • Steak Bites: Most cuts of beef will work for the recipe but top sirloin steak tends to result in the most tender bites.
  • Lemon Noodle Bowl: I suggest assembling the bowls individually. Placing everything into a skillet and tossing leaves the noodles as one big sticky ball.
  • One Pan Chicken and Potatoes: In order to have the sprouts become slightly crispy, make sure you first de-stem them and then quarter or even cut them once more. The smaller the sprouts the better they'll crisp up and taste.
  • Maple Balsamic Chicken: If you need the maple balsamic chicken to cook faster, slice the chicken breasts into strips.

All of the recipes are already dairy and gluten free, use whatever noodles suit you on the lemon noodle bowl.
